Does anyone know how far it is to off resort dining
as onsite restaurants seem a little bit limited.

Probably about 10-15 minutes. The longest part is just getting to the freeway from the resort. There are many restaurants (mostly chains) along I-10 at both Chandler and Ray Rd (even Warner and Elliot). If you go further east, there are many more near the Chandler Mall (maybe 15-20 min from the resort, via the AZ-202/San Tan Fwy).
